Classic Boiled Egg Sandwich Recipe | Perfect Finger Food

Whenever our office serves afternoon tea after meetings, I will always head straight for the egg sandwiches! Here is a super simple classic recipe.

Ingredients

5 eggs

3 tbsp mayonnaise

1/4 red onion

1 tsp curry powder

1/2 tsp sweet paprika powder

salt

pepper

Method

1. Heat water over small fire (enough to cover the eggs)

2. When water simmers, gently add room temperature eggs

3. Set timer to 7 minutes

4. Put eggs in bowl and run under cold water

5. Remove egg shells whilst in water

6. Smash eggs with fork

7. Add 3 tbsp mayonnaise and mix

8. Add 1 tsp curry powder, 1/2 tsp sweet paprika powder and a pinch of salt (stir in)

9. Add 1/4 diced onion (you can also use spring onions).

10. Grind fresh black pepper

11. Mix evenly

12. Spread over fresh bread (I love bread from the Asian bakeries as they are lighter)
